Fun Facts about Turnips

Turnips are a cool two-colored root vegetable with a white bottom and purple or red top. This Vitamin C and Fiber filled Veggie from the Underground is great for taking care of the dirty work in your body. So, I hope your potty trained and it also helps lower blood pressure! Because of such great benefits to the human body, Turnips have been welcomed into the “Superfood” category which means you should start buying turnips right away!

Speaking of Turnips, let’s hear a story about a Veggie named Turnip who found out why doing aerobics is so cool! Enjoy, and don’t forget to try the Vegan recipe in the story! A fun activity to do with your parents!

Turnip Does Aerobics

“Ummm Turnip, what are you doing?” Turnips Mother says confused.

“A one and a two and a three and a four.” Turnip says while doing jumping jacks.

“Turnip!” She yells.

“Oh hey mom! I didn’t see you.” Turnip says while taking off his headphones. “I was just getting a workout in after school. You know, sitting down all day at school leaves me with a lot of energy when I get home, so why not do aerobics. This cool Veggie is having so much fun doing it, so I just follow along.”

“And what do you know about aerobics Turnip?”

“Nothing! But it is so much fun. It’s like playing a sport by myself, but I don’t have to worry about getting hurt or losing!”

“I think that is great turnip! If you’re going to be jumping around this house, it might as well be productive. I mean, anything is better than you playing that silly game all day. Sorry I interrupted; continue.”

“Ok Mom! And a five and a six and a seven and an eight.”

After Turnip finished his workout, he went into the kitchen while following his nose.

“Hey Mom, what are you making? It smells so good.”

“I’m glad you asked Turnip. Are you ready to eat?”

“Yes Mom, I worked up a big appetite. I can eat a horse!”

“Easy big guy, you know we don’t eat meat in this house. But I did prepare a delicious meal called Ratatouille.”



“Ratatouille!” Turnip says shocked. “

You said we don’t eat meat in this house, but you want to eat rats now? Gross!”

“Calm down Turnip, you’re so dramatic. We aren’t eating rats. Ratatouille is a beautiful blend of eggplant, tomatoes, squash, zucchini, green peppers, and garlic.”

“Oh ok! I can’t wait to try it!”

“You go and wash up and dinner will be served by the time you get back. Oh, and Turnip, have your 2 brothers and sister come down with you.”

The next day, Turnips Mom comes home to another surprise. Not only is Turnip doing more aerobics, he is now teaching his brothers and sister what he learned.

“Let’s go, get those arms up!” Turnip yells. “Great job sis, let those arms work for you!”

“What is going on here?” His mother asked.

Turnips brother Kermit jumps up and said.

”I told Turnip I was out of breath after walking up the steps at school every day. He says, that since I’m so round, aerobics can help me get in shape!

“Yea!” Turnips other brother Sterling yells. ”I told Turnip it was hard for me to fall asleep at night, and I just lie there staring at the ceiling. He said if I can get all the jitter bugs out of my arms and legs, it willbe easier to fall asleep; so I’m trying aerobics!”

And what about you Clare? Why are you doing aerobics?

“They are making so much noise that I cannot concentrate on my homework. But after being in school all day, I need a little break from the books anyways. In other words, if you can’t beat them, join them!” Clare laughs.

“I guess that makes sense.” Turnips Mother says. “Turnip, looks like you have become an aerobics trainer overnight. Most importantly, you have become a great role model to your brothers and sister. I am so proud of you! And also Turnip.

“Umm Mom.” Turnip says in a scared voice. “We’re actually in the middle of a workout, sooo.”

“Oh, I’m sorry!” She says embarrassed. “I didn’t mean to interrupt, again!”

Ratatouille Recipe

(Serves 8)

Veggies

2 Eggplants 6 Tomatoes 2 Yellow Squash 2 Zucchinis

Sauce

2 tablespoons olive oil 1 onion, diced 4 cloves garlic, minced

1 red bell pepper, diced 1 yellow bell pepper, diced salt, to taste pepper, to taste

28 oz can of crushed tomatoes 2 tablespoons chopped fresh basil, from 8-10 leaves

Herb Seasoning

2 tablespoons chopped fresh basil, from 8-10 leaves 1 teaspoon garlic, minced

2 tablespoons Chopped fresh parsley 2 teaspoons fresh thyme salt, to taste

pepper, to taste 4 tablespoons olive oil

Preparation

Preheat the oven for 375˚F (190˚C).

Slice the eggplant, tomatoes, squash, and zucchini into approximately ¹⁄₁₆-inch (1-mm) rounds, then set aside.

Make the sauce: Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated. Remove from heat, then add the basil. Stir once more, then smooth the surface of the sauce with a spatula.

Arrange the sliced veggies in alternating patterns, (for example, eggplant, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with salt and pepper.

Make the herb seasoning: In a small bowl, mix together the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon the herb seasoning over the vegetables.

Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.
