Fun Facts About Carrots!
Carrots are a root vegetable with a beautiful orange color. They are a great source of Vitamin A, which contains tons of Beta-Carotene. Beta-Carotene helps in keeping the cornea clean. You know that clear cover over the eyeball! But be careful, did you know that Beta-Carotene also causes carrots to turn orange? Which means, if you eat way too many carrots a day, your skin could possibly turn orange too! Exciting, I know! You can look like an Umpa-Lumpa! Let me tell you a story about a Veggie named Harrot, whose skin is naturally orange because, he’s a carrot! Enjoy, and do not forget to try out the Vegan recipe in the story! Harrot Loses his Brother in the Park!
Harrot Slams the door. “I wish I never had a brother!” Harrot yells. “Why can’t it go back to how it used to be? I had my own toys, my own games, I got all the attention! And now!”
“Calm down Harrot.” Harrot’s Mother says calmly. “Do you know how I would describe your attitude?” “How Mother?” “You’re being selfish.”
“I don’t even like Shellfish Mother! They have that hard shell on them, and I always feel like they’re staring at me!” “Not shellfish Harrot. Selfish!” “Oh! Sorry.”
“Harrot, selfish is when you only care about yourself. You don’t want to share, nor do you care if your younger brother has fun. I have an idea, take your brother on a picnic. I will make you two a meal and watch you both from a distance. You two can have some quality time eating and playing in the park.”
“No mom, it’s bad enough we live together, now you’re going to leave me alone with him at the park. He’s always taking my toys and running off with them. Then you get upset with me when I can’t find the toys.”
“Yes, I do get upset with you Harrot. Because you’re his older brother and you should be responsible for him, and more responsible than him. So, get ready to go to the park. I’ll make the food, and you get your brother ready.”
“Ok Mother.”
Even though there were a lot of kids in the park. The brothers were able to find a space to set up their picnic.
“Yes!” Harrot’s little brother Marrot says with excitement. “Mom made our favorite, Potato Pancakes. I love how she makes them with the freshest shredded potatoes, zucchini’s, onions, and black pepper. Then mashes it up with oat flour and baking powder. Hey Harrot, I know it looks good, but you really should stop drooling over the food,” Marrot says while giggling.
After Harrot and his brother finished eating. Marrot immediately grabs Harrot’s toy dinosaur and runs off.
“Marrot!” Harrot yells while chasing after his younger brother.
“Push me on the swings Harrot.”
“Ok, but you can’t keep running away from me like that.” Harrot says with a strict voice.
“Wheeee!” Marrot says with excitement as he gets higher and higher after every push from Harrot.
Suddenly, Marrot jumps off the swing and runs off once again. This time, Harrot does not chase after his younger brother. Harrot turns his back and yells.
“I’m not chasing you this time. You must learn to stay still. Now come back here Marrot. Marrot?”
Oh no! Harrot turns around and saw other kids playing with no sign of his brother Marrot.
“Marrot! Harrot yells, as he’s filled with more and more fear of losing his brother each time he yells his name. “Marrot! Marrot! He yells, as he looks around and runs in circles, checking under the playhouse, searching all the slides, and now looking for his mother.
Harrot then gives up and drops to his knee’s saying. “If anyone hears me, I don’t care that he loses my toys and I get in trouble for it, I don’t care that he plays my games, and I don’t care that we have to share my mother’s attention. I just want my brother back!”
As Harrot opens his eyes and turns around. There stood his Mother, holding his little brother Marrot in her arms.
Harrot then jumps up, grabs Marrot out of his Mother’s arms, and gives Marrot the biggest hug.
“Marrot.” Harrot says while looking his brother in the eye’s. “You are my little brother, I love you, and I will never lose you again. You can play with my toy’s, my games, and Mother clearly has enough attention to keep up with the both of us!”
“I told you Harrot, you must be more responsible for your little brother.”
“I know Mother, and I will take care of my little brother from now on because family comes first!” Harrot says with a big smile!

Potato Pancakes Recipe
Ready in 50 minutes | Makes 20
Ingredients
- 2 Russet potatoes, grated
- 1 Large zucchini, grated
- ½ Yellow onion, grated
- ½ cup Oat flour
- 1 teaspoon Baking powder
- ½ teaspoon freshly Ground black pepper
Instructions
- Preheat oven to 425 degrees. Cover two sheet pans with parchment paper.
- Spread half of the grated vegetables on a clean kitchen towel, then roll and wring the towel to draw out the excess moisture. Transfer to a large mixing bowl. Repeat with the remaining vegetables.
- In a small bowl, combine the oat flour, baking powder, and pepper. Add to the vegetable bowl, and mix well, using your hands to evenly distribute the flour and baking powder.
- Scoop about ¼ cup of potato mixture, and handshape it into a semi-tight ball. Flatten with your palms and place the pancake onto the prepared pan. Repeat with the remaining mix, spacing the pancakes about 2 inches apart.
- Bake for 12 minutes. Flip and bake for another 12 minutes, or to your desired level of crispness. Serve at once. Top with the condiment of your choice.
